Peanut Punch

Recipe courtesy Mad Hungry with Lucinda Scala Quinn

Yield: Makes 4 8-ounce servings

Ingredients

  • 2 cups roasted and shelled peanuts
  • 3 cups water
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons honey
  • 1/4 teaspoon grated nutmeg

Directions

  1. Place the peanuts and water into a blender jar and blend until the peanuts are pulverized. 
  2. Strain the liquid from the ground peanuts and put the liquid back into the blender jar along with the remaining ingredients. (Discard the ground peanuts.) 
  3. Beat it until it is frothy. 
  4. Serve it immediately or refrigerate (blend again before serving).
