Lumpia Egg Rolls


Yield: 200 egg rolls

Prep: 3 hours

Ingredients

  • 3 pounds of pork
  • 3 onions - medium sized
  • 3 carrots
  • 3-4 celery sticks
  • 4 cloves of garlic
  • 1 pound of green beans
  • 2 cans of  water chestnuts
  • 2-3 bags of bean sprouts
  • Soy sauce
  • Green onions
  • Salt & pepper

Directions

    Meat
  1. Saute garlic, onion, meat, salt and pepper. Add water.
  2. Cook until water evaporate.

    Bean Sprouts
  3. Saute beans sprouts and water chestnuts for two minutes. Add soy sauce.

    Vegetables
  4. Saute remaining vegetables (except green onions) separately.

  5. Let all three cool off.
  6. Add all three together with the chopped green onions.
  7. Refrigerate overnight and let water drain.
  8. Roll mixture into lumpia egg roll wrappers and freeze.

  9. Remove from freezer and fry in hot oil.
